There hasn’t been a recipe post in a while, so I thought that today I would share with you one super-yummy Recipe!

What you need:
For the Crust:
- 100g salted roasted peanuts
- 250g all-purpose flour
- 1 egg
- 120g Sugar
- 90g Butter
- 1/2 teaspoons baking powder
- 1 teaspoons vanilla extract
For the Filling:
- 200g Sugar
- 90g butter, cold and cubed
- 100g salted roasted peanuts
- 120ml heavy cream
- 1 teaspoon salt
For the Topping
- 250g milk or semi-sweet chocolate, coarsely chopped
- 100ml heavy cream
- chopped Snickers bar, crushed peanuts, extra caramel for topping
Directions:
For the crust: Preheat the oven to 180°C. Using a food processor, pulse 100g peanuts, the flour, 120g sugar, the baking powder, the vanilla extract and the egg together.
Add 90g of cold butter and knead the mixture. Using floured fingers press the dough evenly into a 9-inch tart pan.
Bake for 18-20 minutes. Remove from the oven and allow to slightly cool as you prepare the filling.
For the caramel: heat granulated sugar in a medium saucepan over medium heat, stirring constantly with a high heat-resistant rubber spatula.
Once sugar is completely melted, immediately add the butter. Stir the butter into the caramel until it is completely melted, about 2-3 minutes.
Very slowly, drizzle 120ml of heavy cream. Since the heavy cream is colder than the caramel, the mixture will rapidly bubble and/or splatter when added. Allow the mixture to boil for 1 minute. It will rise in the pan as it boils.
Remove from heat and stir in 1 teaspoon of salt. Mix the salted caramel and 100g of peanuts together. Pour caramel peanuts filling into crust.
For the topping: Combine chocolate and cream in a heatproof bowl over a saucepan of simmering water. Stir with a metal spoon until smooth. Remove bowl from heat and spread over caramel peanut filling.
Garnish with optional toppings and Peanuts.
